Sausage Egg and Cheese Bites (Low Carb Keto)

These Sausage Egg and Cheese Bites are the perfect low carb, grab and go, Keto friendly breakfast option! Perfect for an easy meal prep breakfast. Enjoy! 😉

Ingredients

  • 1 pound breakfast sausage, cooked, drained and cooled slightly
  • 4 ounces cream cheese, softened
  • 3 eggs, beaten
  • 1 cup shredded cheddar
  • 1/3 cup coconut flour
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350 degrees
  2. Combine cooked sausage and cream cheese until completely combined.
  3. Add in remaining ingredients until well combined and chill 10 minutes.
  4. If you skip chilling the dough they will flatten as they cook and not be nice round balls
  5. Drop onto a greased baking sheet (I like to use the silicone baking mats) using a small cookie scoop.
  6. Bake 18-20 minutes until golden brown.
  7. This made 30 for me, but that will depend on the size scoop you use and how tightly you pack them.
