  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter , softened
  • 1 cup white sugar
  • 2 tablespoons lemon zest
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 3 tablespoons milk
  • 3 tablespoons fresh lemon juice*

Lemon Buttercream

  • 3/4 cup unsalted buter , softened
  • 2 tablespoons lemon zest
  • 1/4 teaspoon salt
  • 3 – 3 1/2 cups powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions

Lemon Cupcakes

  1. Preheat the oven to 350F degrees and line a muffin pan with muffin papers.
  2. In a medium bowl whisk together the flour, baking powder and salt.
  3. In a large bowl using an electric mixer, beat the butter, sugar and lemon zest until fluffy (about 2-3 minutes).
